Real-time energy monitoring for restaurant and quick-service chains, on the meters and equipment you already have
A restaurant or quick-service chain can monitor each location's energy use in real time without replacing meters or kitchen equipment. At GSS Analytix, the Phantom Shield gateway reads the energy meters and power analyzers already installed and, where needed, temperature, water level, contactor and thermal relay sensors on exhaust fans and bain-maries. The Reveal platform compares locations, detects anomalies, sends alerts by WhatsApp, email or tickets and runs the on/off schedule you define. In the restaurant chain case published by GSS Analytix, savings come to about $350 a month per location on energy alone. This guide explains what is measured, how it works, where the savings come from, when you don't need it and where it is already in use.
What is measured at each restaurant
- Energy use (kWh) at each location's electrical boundary, to compare restaurants with one another
- Voltage and current per phase, frequency, active, reactive and apparent power, and power factor
- Electrical events and consumption spikes or deviations, in real time
- Bain-marie temperature and water level, against the defined operating ranges
- Contactor and thermal relay status of each exhaust fan, to detect thermal overloads
- Schedule compliance: the defined on/off schedule against the actual equipment state
- Status of UPS units, battery banks and backup generators at the same location, where they exist
Every location sits in one view on the same data layer, so one restaurant can be compared with another even when their meters and equipment are from different brands.
How it works: from each location's meter to scheduled action
- 1Connect. Phantom Shield, physical or virtual, reads the existing energy meters and power analyzers over Modbus RTU/TCP, BACnet, SNMP, MQTT or HTTP/REST, with no firmware or hardware changes. Kitchen equipment that was never instrumented gets temperature, water level, contactor and thermal relay sensors.
- 2Collect. Readings are taken continuously with local storage on the gateway (store and forward): if a restaurant loses internet, the data syncs when the connection returns.
- 3Compare. Reveal maps each signal to a common semantic layer (Brick), compares energy use across locations, flags the ones that drift from normal and measures the impact of a schedule or equipment change with before-and-after comparisons.
- 4Alert. When a variable leaves its configured range, such as a bain-marie with low water, a tripped thermal relay or a consumption spike, Reveal sends the alert by WhatsApp, email or tickets and points attention to the locations with exceptions.
- 5Automate and log. Phantom Shield runs the scheduled start-up and shutdown of exhaust fans and kitchen equipment according to the schedule your team defines in the platform, and every action is logged. On equipment that does not accept remote commands, Reveal supervises and alerts but does not operate it.
Where the savings of about $350 a month per location come from
The savings GSS Analytix published for a restaurant chain do not come from one change but from three combined: demand-based exhaust fan control contributes $150 to $180 a month, bain-marie control $80 to $100, and schedule optimization plus eliminating phantom loads through centralized visibility $70 to $80. For reference, in a 20-location chain that adds up to about $7,000 a month.
With real data from each location, the operations team prioritizes inspecting bain-maries with temperature deviations or low water, escalates to preventive maintenance when an exhaust fan shows thermal overload, verifies schedule compliance without relying on manual reports and focuses only on locations with active exceptions.
Energy alongside HVAC, backup power and the rest of the location
Reveal correlates the signals from every connected system at the same location: a grid event, a transfer to the backup generator and a UPS alarm are read together. If the chain also wants to supervise the air conditioning at its restaurants, HVAC joins the same platform.
Reports are audit-ready, with before-and-after comparisons when needed, and each location's energy use can also be queried in natural language, by text or voice, through a compatible LLM.
When kitchen equipment was never instrumented
Many exhaust fans and bain-maries were never instrumented. With Reveal Kitchen, temperature, water level, contactor and thermal relay sensors are connected to that critical equipment, and Phantom Shield runs the programmed on/off cycles. Where wiring is hard, Modbus-to-LoRaWAN converters carry the meter readings wirelessly.
When you don't need it
- You run a single restaurant and the monthly energy bill is enough to make decisions
- You only want the monthly total, without comparing locations, getting alerts or acting on equipment
- You want to replace your kitchen equipment: Reveal works with the exhaust fans, bain-maries and meters you already have
- You want equipment switched on and off with no rules or log: Phantom Shield runs only the schedules your team defines, and every action is logged
If you run dozens of restaurants and today switching on exhaust fans, checking bain-maries and tracking energy use all depend on each location's staff, that is where real-time monitoring and scheduled automation replace rounds and manual reports.
Where it is already in use
Fast-food chain, Bogotá
Across 5 locations, Reveal watches bain-marie temperature and water level and exhaust fan thermal overload, and records each location's electrical consumption.
Restaurant chain
About $350 a month in savings per location by combining demand-based exhaust fans, bain-marie control and schedules with centralized electrical visibility.

FAQ: energy monitoring for restaurant chains
How do you monitor each restaurant's energy in real time across a chain?
Phantom Shield reads the energy meters and power analyzers already installed at each location and sends the data to Reveal, which records consumption (kWh), voltage and current per phase, power factor and electrical events in real time, and compares every location in one view.
Do restaurants need new meters or new kitchen equipment?
No. Phantom Shield reads the existing meters over Modbus, BACnet, SNMP or MQTT, with no firmware or hardware changes. Exhaust fans and bain-maries that were never instrumented get temperature, water level, contactor and thermal relay sensors.
How much can a restaurant chain save by monitoring its energy?
In the case published by GSS Analytix, about $350 a month per location on energy: $150 to $180 from demand-based exhaust fan control, $80 to $100 from bain-marie control and $70 to $80 from schedules and phantom loads. Each chain's result depends on its equipment and schedules.
What alerts does the chain's operations team get?
Alerts by WhatsApp, email or tickets when a bain-marie leaves its temperature range or runs low on water, when an exhaust fan's thermal relay trips, when equipment does not follow the defined schedule or when a location's energy use drifts from normal.
Can Reveal switch exhaust fans on and off on a schedule?
Yes, on equipment that allows it. Phantom Shield runs the scheduled start-up and shutdown according to the schedule your team defines in the platform, without relying on on-site staff, and every action is logged. On equipment that does not accept remote commands, Reveal supervises and alerts.
What happens to the data if a restaurant loses internet?
Phantom Shield stores readings locally (store and forward) and, when the connection returns, the data syncs to Reveal, so the readings from that period are not lost.
How is energy monitoring for a restaurant chain priced?
By primary connection: each meter, piece of equipment or data source connected through Phantom Shield counts as one. The proposal includes a one-time fee for equipment, installation and onboarding, plus a monthly service fee. Tell us how many locations and how much equipment you have and we will prepare a proposal.
How many restaurants do you want to measure?
Tell us how many locations you run, which meters are installed and which kitchen equipment still depends on each restaurant's staff, and we will show you in a demo how Reveal compares their energy use and automates schedules without replacing what you already have.
